i. love. boba. there i said it. i love it. I'm in love with it. however, i'm very particular about the ingredients in it. the milk has to be fresh and it can't be too sweet. boba that comes from powder? just forget about it. that being said, i naturally had to learn to make it on my own. the recipe below is simple, only three ingredients: honey, brown sugar, tapioca balls. yes, it takes a little time but the end result is worth it. nothing is more satisfying than that tall glass of jasmine milk green tea with honey boba after a long day and a very delectable meal....

- small bowl
- small sauce pan
ingredients:
- honey
- light brown sugar
- tapioca balls
directions:
honey simple syrup:
- mix equal parts honey, light brown sugar and honey in a microwavable safe bowl.
- microwave the mixture until the sugars are fully incorporated into the water.
- let the mixture cool to warm.
- fill the small sauce pan with water and bring to a boil.
- place the tapioca balls in the water and simmer for 30 minutes.
- after the balls are completely cooked, drain and rinse under cold water. [ the cold water will stop the tapioca balls from further cooking ]
- place the rinsed tapioca in the honey simple syrup and let sit for 20 minutes.
final notes:
beware sugar overload! since the balls are soaked in a honey sugar mixture for 20 minutes, whatever drink you use them with will be sweeter by nature. use less sweetener than you would normally to get that perfect balance. i usually go with half sugar. also, try not to let the tapioca balls sit for longer than 20 minutes in the syrup. any longer and the balls will lose that bouncy texture. and we all know ... they chewier the better!
